Keto Friendly Fathead Cinnamon Rolls

These keto-friendly cinnamon rolls are a twist on the regular High-Carb version. They are made with fathead dough and we use Swerve to sweeten them. You can also use Lakantos (monk fruit) Sweetener. A liquid sweetener is not suitable for this recipe.

They are so easy my 13-year old makes them for the family!

  • Preheat oven to 425 degrees F (218 degrees C). Line a baking sheet with parchment paper.
  • Add the shredded mozzarella and cubed cream cheese in a large microwavable bowl. Microwave for 45 seconds, stop to stir. Microwave again for another 45 seconds. Stir again at the end until well incorporated.
  • Stir in the beaten eggs and almond flour. Knead with your hands until a dough forms. Spread the dough flat into a rectangle shape on parchment paper, using hands or rolling pin between 2 sheets of parchment.
  • Melt together butter and cream cheese in microwave and mix in the sweetener and cinnamon. Spread across the flattened dough. Roll the dough into a log and slice 6 1″ rolls.
  • Line a baking sheet with parchment paper and place the rolls about 2 inches apart
  • Bake for 15 minutes at 425 degrees.
  • Remove from oven and allow to cool before removing from baking sheet. Once they are cool drizzle icing over them.
