Keto-friendly Nachos with homemade salsa and guacamole

Using Pork Rinds instead of corn tortilla chips gives you the crunch that makes this dish so delish! Make sure you buy quality pork rinds that don’t have extra additives especially maltodextrin!

This is a really easy dish that my son loves to make for a quick but filling, lunch or a dinner!

Many commercially made salsas have added sugar, and most salsas include raw onions. Surprisingly raw onions have quite a bit more carbs than cooked onions. We have included a salsa recipe without onions, making this a keto-friendly topping.

  • Pulse the chopped tomatoes (except for the reserved diced tomatoes) in a blender for 10-15 seconds so they are chopped but not mushy. Drain the tomatoes using a strainer to remove the excess liquid.
  • Put the tomatoes back in the blender or ninja and add the remaining ingredients except for the reserved diced tomatoes. Pulse a few times until the salsa reaches your desired consistency.
  • Stir in the reserved diced tomatoes.
  • Any leftovers can be stored in the fridge in a sealed container for up to a week.
  • Guacamole
  • Combine all ingredients in a blender/food processor or use an immersion blender in a tall container, and blend on high until smooth. Store in an airtight container in the fridge for up to 1 week. Stir before using as it will separate.
  • Nachos
  • Turn oven on to 350 degrees. Spread parchment paper on a baking sheet. Spread out 1 1/2 cups pork rinds.
  • Sprinkle diced tomatoes, diced cooked chicken or cooked ground beef, diced chili peppers (optional), diced roasted or raw red peppers (optional), Top with 3/4 cup of shredded cheese.
  • Heat in oven for 10 min at 350 or until cheese melts and then broil on high for 1 minute (watch carefully so it doesn't burn)
  • Serve immediately with your choice of guacamole, salsa, and full-fat sour cream.
